Pr. Carole Ayoub Moubareck obtained her Pharmacy Degree in 2000, completed her PhD in microbiology in 2005 and undertook her post-doctoral fellowship at the Institut Pasteur of France in 2006. She served as the Associate Director of the National Reference Center of Antibiotic Resistance in France from 2007 to 2009 and transitioned to academia as Assistant Professor at Saint Joseph University in Lebanon between 2010 and 2013. Pr. Ayoub Moubareck then joined in 2014 the College of Natural and Health Sciences at Zayed University where she currently holds the position of Associate Dean. Her research interests are in controlling infectious diseases by monitoring the spread of resistant bacteria to antibiotics and characterizing the related resistance mechanisms. Another part of her research is about the intestinal microbiota and its implication in obesity. She is also interested in food security and is lately examining the potential for recycling organic materials into compost.
